In Vourey, Guillaume Vial carries on the tradition, being the fourth generation to work on the family farm. He took over the farm in 2018, following his father's retirement. Working two jobs, he divides his time between his work as a research engineer in the medical sector and his agricultural activities as farm manager.

The farm covers 25 hectares, including 7 hectares of walnut treesShe is part of theAOP Grenoble Walnuts, with traditional varieties, in particular Franquette and MayetteBoth are known for their delicate flavor. The smaller sizes, however, are processed directly into traditional oil.

The harvest takes place as the fruit ripens to guarantee excellent nutritional and taste quality: in just 15 days, all the walnuts fall, and Guillaume has only 3 days to collect them before they spoil. Each year, he harvests between 5 and 6 tons of dried nuts : 50% are sold to wholesalers under the Grenoble Walnut PDO, the rest is sold directly from the farm.

Several municipalities in the Voironnais region are part of the territory covered by theAOP Grenoble WalnutsThis label guarantees that the fruit is grown according to demanding specifications.
Only 3 varieties of nuts: Franquette, the Parisian and the Mayette are covered by the PDO. The walnuts are harvested when ripe, sorted and washed within 36 hours of harvesting. Sorting and packaging are carried out on the same site to minimize handling.

Moreover, 2 to 3 nuts a day are enough to provide essential vitamins, minerals and fatty acids.”

Patience and passion are the key words: a walnut tree puts 10 years before production, but the result is worth it!

Deeply committed to responsible agricultural practices and production, Guillaume is part of a sustainable and ecological approachThe farm also counts about twenty beef breed heifers, raised organically. Their small size allows them to grazing under the walnut trees, thus ensuring natural orchard maintenance, without machinery or fuel. The manure produced in the barn is spread at the end of winter for a natural fertilization soils.
